STEW JEWELEAN

1 lb. ground beef
2 tbsp. butter
1 onion, good size
5 med. potatoes
4 med. carrots
3 lg. stalks celery
1 1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. oregano, ground
1 lb. can green beans
1 can cream of mushroom soup

Lightly brown meat. Add onions to meat and cook until golden. Add potatoes, celery and carrots which have been cut into strips. Place vegetables over beef. Add seasonings. Cover and simmer until vegetables are barely tender, about 15 minutes. Add beans and soup and cook 15 more minutes.

POTATO BEEF QUICK MEAL

2 lbs. ground beef
1 c. chopped onion or 4 tbsp. instant minced onion
1/4 c. chopped green pepper
1 tsp. brown sugar
1 tsp. salt
Dash of red pepper
1 1/2 c. water
1/2 c. chili sauce or ketchup
1 pkg. Hungry Jack au gratin or scalloped potatoes
2 c. (16 oz. can) tomatoes, broken up
1/4 to 1/2 c. shredded Mozzarella cheese

Preheat oven to 350 degrees. In 10 inch deep oven-proof skillet, brown ground beef; drain if necessary. Add remaining ingredients, except cheese. Mix well and bring to a boil. Bake 35 to 45 minutes or until potatoes are tender. Sprinkle with cheese; bake 5 minutes longer. Refrigerate any leftovers. Makes 8 servings.

POTATO-BEEF QUICK MEAL

2 lbs. ground beef
1/4 c. chopped green bell pepper
Dash of cayenne pepper (optional)
1/2 c. chili sauce or ketchup
1 pkg. au gratin or cheese scalloped potato mix
16 oz. can tomatoes, cut up, undrained
1 to 2 oz. (1/4 to 1/2 c.) shredded Mozzarella cheese
1 c. chopped onions
1 tsp. brown sugar
1 3/4 c. water
1/2 tsp. Worcestershire sauce

Heat oven to 350 degrees. In a large oven-proof skillet, brown ground beef, drain. Add onions, green peppers, brown sugar, cayenne pepper, water, chili sauce, Worcestershire sauce, potato slices, contents of seasoning mix envelope, and tomatoes. Mix well. Bring mixture to a boil. Stir.

Carefully place skillet in oven. Bake at 350 degrees for 35-45 minutes or until potatoes are tender, stirring occasionally. Sprinkle with cheese. Bake an additional 1 to 2 minutes or until cheese is melted. 8 (1 cup) servings.
